Sunshine State Canndi Cake

1 box yellow cake mix

1-1/2 lbs. ricotta cheese

3/4 cup sugar

3 eggs

1 tsp. vanilla

13x9 pan, greased

Mix the cake mix according to box directions and spread in pan.

Mix other ingredients together. Spread ricotta mixture evenly over batter in pan.

Bake at 350° for 45-60 minutes.

When cake cools, sift powdered sugar cake, or top with chocolate syrup.

Lisa’s Apple Bread

1-1/2 cups all purpose flour

1/4 cup cooking oil

1 tsp. baking soda

1 egg

1/4 tsp. salt

1/4 tsp. baking powder

1/4 tsp. cinnamon

1/4 tsp. ground nutmeg

1 cup sugar

1 cup peeled apple, shredded or cut into small pieces

1/4 tsp. finely shredded lemon peel

1/2 cup chopped walnuts

Combine flour, cinnamon, baking soda, salt, baking powder and nutmeg. In a separate bowl, combine sugar, apple, cooking oil, egg and lemon peel. Mix well. Add flour mixture and stir just until combine. Stir in chopped walnuts. Grease a loaf pan and pour batter into it. Bake at 350° for 55-60 minutes. Enjoy.

Khayana’s Pork Hash

1/4 lb. ground pork

1/4 lb. diced or minced shrimp

1 egg, or egg white

2 tbs. chopped water chestnuts

2 tbs. cornstarch

2 tsps. soy sauce

1 tsp. white sugar

1 tsp. minced garlic

1 tsp. oyster sauce

1/4 tsp. salt

1/4 tsp. ground black pepper

1/4 tsp. sesame oil

1 pkg. wanton wrappers

Mix all ingredient except wrappers. Scoop mix into wrappers and steam in pan for 30 minutes.

Lee’s Italian Creme Cake

Beat 5 egg whites until very stiff and set aside. Save yolks.

Cream together 1 stick margarine, 1/2 cup Crisco, and 2 cups sugar

Add 2 cups self-rising flour, 5 egg yolks, 1 tsp. vanilla, 1 tsp. soda, and 1 cup buttermilk.

Fold in egg whites. Add a small can coconut and 1 can chopped pecans.

Bake in a 350° oven in three greased 8” or 9” cake pans. When cool, ice cake with recipe below.
